If you leave old oak untreated, very little happens in most cases. Oak naturally contains a high concentration of tannin, a substance that protects the wood against mold, insects, and moisture. Antique oak has also had decades or centuries to fully dry out and stabilize. Untreated oak slowly turns gray and develops a silver-gray patina.
That graying is not a sign of deterioration. It is the wood responding to light and air, exactly as it always has. For many architects and designers, that natural aging is precisely the reason to choose antique oak. Indoors, untreated oak barely changes color and remains stable, as long as it is not exposed to extreme fluctuations in moisture.
