Air-dried oak meets quality requirements when it has been dried outdoors for several years, has reached a stable moisture content suitable for its intended use, and shows no structural defects that affect load-bearing capacity or workability. Oak that is a hundred years old or more has a different density and stability than freshly sawn wood. The cell structure is closed, the resin has dried out, and the fibers have settled. The most reliable way to measure the moisture content of oak is with a pin-type moisture meter, which measures the electrical resistance between two electrodes. Insert the pins at least 30 millimeters deep into the wood and take multiple readings at different points along the piece. A surface-only reading does not give a representative picture of the core.
Oak is a dense species in which the outer layers dry faster than the core. This means a piece of wood can look and feel dry while the core is still considerably wetter. Always take readings at the end grain and in the middle of the piece, and compare the values.
With antique oak that has been stored outdoors for years, it is common to find that the core is stable while the surface has absorbed slightly more moisture from rain or condensation. A difference of two to four percent between core and surface is normal. Larger differences may indicate insufficient drying time or improper storage.
During a visual inspection of oak, you look for cracks, knots, sapwood, insect damage, and the overall straightness of the piece. Not every imperfection is a problem, but you need to be able to judge whether a particular defect affects the intended use. Always start with the end grain faces, as these reveal a great deal about the internal structure of the wood.

Most of these deviations are inherent to the material and are part of the character of reclaimed oak. Whether a deviation is acceptable depends on the application. A shrinkage crack ten centimeters deep in a piece measuring thirty by thirty centimeters is assessed differently in a structural application than in a visible application above an open fireplace. Clarify this in advance with the supplier and establish the acceptance criteria in the order.
Color variation and surface weathering in antique oak beams and boards are more of a quality characteristic than a defect. A gray patina or silvery-looking surface indicates years of weathering and is proof of the drying time. This partially disappears when the wood is sawn or sanded.
When inspecting a delivery, verify that the oak matches your order by comparing the dimensions, quantity, species, and any additional specifications — such as minimum length or moisture content — against the order confirmation. Do this before unloading the shipment so that any discrepancies can be reported immediately.

Do not accept the delivery unconditionally if there are significant deviations. A good supplier will resolve this — either through a replacement delivery or a price adjustment.

In that case, a replacement delivery or adjustment is the logical next step. In the second situation, the deviations are aesthetic in nature or fall within the normal range for reclaimed wood. That calls for a conversation about expectations, in which the agreements made beforehand are the deciding factor.
